§ 46.283. Substituting pasteurized eggs for raw shell eggs in certain recipes.
Pasteurized eggs or egg products shall be substituted for raw shell eggs in the preparation of foods such as Caesar salad, hollandaise or b[eacute]arnaise sauce, mayonnaise, eggnog, ice cream and egg-fortified beverages that are not either of the following:
(1) Cooked as specified in § 46.361(a)(1) or (2) (relating to cooking raw animal-derived foods).
(2) Included in § 46.361(d).
